Varieties: Chardonnay, Pinot Noir
Elaboration: Cava elaborated with selected wine from chardonnay and pinot noir grapes. It has been fermented at low temperature to maintain and enhance the aromas of the grapes. Subsequently the second fermentation is carried out in the bottle for about 36 months.
Serving temperature: 6ºC
Pairing: Capon and Poulard, Quail and partridge, Dried fruits, Duck, Oven roasted chicken, Chicken in sauce, Pastries.
Appearance: Yellow in color, with light grayish tones. Bright with a soft release of small bubbles that at the end form a compact crown.
Aroma: Very complex, powerful and intense. Reminiscent of fruits such as apple or apricot, also tropical fruits, of great finesse. Tertiary aromas of aging are also appearing, still underdeveloped and increasing with time.
Taste: Splendid release of very fine and elegant carbonic. Pleasantly fresh, full-bodied and persistent, making it a Cava with great personality.
