Foie gras is one of those products that divides food lovers into two groups: those who truly know it and those who think they do. Because there is a huge difference between industrial foie gras and artisanal foie gras, and also —although less known— between Spanish foie gras and Hungarian foie gras.

First: what makes a high-quality foie gras different?
Foie gras is the hypertrophied liver of duck or goose, obtained through controlled feeding. Final quality depends on several factors: the breed of the animal, the type of feeding, the production process and, above all, the raw material itself.
An artisanal foie gras has a smooth, buttery texture, an even ivory or pinkish color, a complex flavour with notes of nuts, butter and earth, and a melt-in-the-mouth quality that is unmatched. Industrial foie gras, on the other hand, tends to be paler, softer and with a less defined flavour.
With that in mind, let’s look at the differences between the two traditions available in our shop.
Spanish foie gras: tradition from the southwest
Spain has foie gras production mainly concentrated in Extremadura, Navarra and Catalonia, with Mular duck, the most valued breed for this product. The dry climate and cereal fields of these regions result in a maize-rich diet that produces livers with very recognisable characteristics:
- Flavour: Intense, with toasted and nutty notes. Slightly more rustic and mineral than the Hungarian version.
- Texture: Firm and consistent. It slices well when cold and holds up in hot cooking without losing structure.
- Color: Toasted cream, sometimes with darker tones depending on the diet.
- Best use: Perfect for hot preparations (pan-seared, wine reductions, croquettes), paired with acidic jams and sweet wines such as Pedro Ximénez.
Hungarian foie gras: the great hidden gem
Hungary is the second largest foie gras producer in the world, far behind France in visibility but not in quality. The Hungarian tradition mainly works with goose (instead of the more common duck in Spain), which creates a significant difference in the final result.
- Flavour: Milder and more milky than the Spanish one. Elegant, delicate, with buttery notes and a natural sweetness that does not need accompaniment to stand out.
- Texture: Exceptionally smooth. It melts in the mouth with ease. More delicate in hot cooking, but in cold preparations —terrine or mi-cuit— it is unmatched.
- Color: Pale ivory, almost white in the best goose specimens. Visually and texturally different from the Spanish version.
- Best use: To be enjoyed cold, as the star of a platter, spread on lightly toasted brioche bread with flaky salt and a pinch of pepper. Also sublime paired with apricot Pálinka.
