There are drinks that tell the story of a country in every sip. Pálinka is one of them. This Hungarian fruit spirit has been present on Hungarian tables for centuries: at celebrations, farewells, in grandmothers’ kitchens and in the best restaurants in Budapest. And yet, in Spain it is still almost a secret.

What is Pálinka?

Pálinka is a fruit spirit produced in Hungary (and some regions of Austria) through fermentation and double distillation of fresh fruit. Unlike other spirits, no sugar or artificial aromas are added: all the flavour comes exclusively from the fruit.

It has had Protected Designation of Origin since 2008, which means that to be called authentic Pálinka it must meet strict requirements: Hungarian fruit, traditional distillation and a minimum alcohol content of 37.5%, although artisanal versions often exceed 50%.

The result is a clean, expressive and surprisingly complex spirit. Nothing like the industrial spirits commonly found in Spain.

The most popular varieties

Pálinka can be made from almost any fruit, but some varieties are true classics:

  • Plum (Szilva): The most traditional and widely consumed. Round, earthy flavour with notes of ripe fruit and a long aftertaste. A favourite in rural Hungary.
  • Apricot (Barack): Aromatic, floral and slightly sweet on the nose, dry on the palate. One of the most appreciated outside Hungary.
  • Quince (Birs): Rarer and more sophisticated. Spicy, herbal notes and a refreshing acidity that makes it especially interesting for curious palates.
  • Pear (Körte): Delicate and elegant. If you are new to Pálinka, this is an excellent entry point.
  • Sour cherry (Meggy): Intense, fruity and slightly tart. Perfect to pair with aged cheeses.

How to serve it properly

Pálinka is not meant to be taken as a shot in one go. That is the first mistake people make when trying it for the first time. To truly enjoy it, follow these guidelines:

  • Temperature: Between 16 and 20 °C. Never fully chilled, as cold suppresses the aromas. Some plum or quince versions can be served slightly warm in winter.
  • Glass: Tulip-shaped glass or tasting glass, never a shot glass. The shape matters: it concentrates aromas and allows you to appreciate it as a quality spirit.
  • Amount: 3 to 4 cl per serving. Sipped slowly, letting the liquid move across the palate.
  • Moment: As a digestif after meals, as a small aperitif, or as an accompaniment to cheese or charcuterie boards.

Surprising pairings

Pálinka is not only meant to be enjoyed on its own. Try these combinations:

  • Apricot Pálinka + foie gras: A classic Hungarian pairing. The fruity acidity of the spirit cuts through the fat of the foie gras and enhances its natural sweetness.
  • Plum Pálinka + aged Manchego cheese: The contrast between the intensity of the spirit and the saltiness of the cheese is outstanding.
  • Pear Pálinka + Iberian ham: A meeting between the two countries we represent. The delicacy of the pear and the complexity of Iberian ham complement each other perfectly.
  • Quince Pálinka + dark chocolate >70%: For lovers of intense flavours. A high-level way to end the evening.
